Grab a pencil and paper while I'm talking this morning because I have a great salsa recipe to give you.

Americans love salsa so much that it has surpassed ketchup as a tangy condiment with pounds consumed per person. Most salsa recipes are a mixture of tomatoes, onions, peppers, and spices. Many of which will probably come from your garden or local farmer's markets.

The type of tomato that you use will affect it's quality. What you want to use, if you can find them, is the so called paste type tomatoes and I personally recommend the variety VIVA ITALIA as developed by Burpee Seed Company. It's a Roma type tomato and most Roma types are OK but I kind of like the VIVA ITALIA. They are firm, produce a thicker salsa, and a little better, like I mentioned, than other Roma type tomatoes.

For the peppers, use both sweet and hot. For color, try and keep with the green peppers. I don't have to remind you to not to use too many hot peppers unless you love it hot.

I developed this recipe several years ago and would love to share it with you.

INGREDIENTS:

  • 3 medium hot peppers
  • 3 sweet peppers
  • 3 medium onions
  • 8 paste tomatoes like I mentioned
  • 1 teaspoon of garlic powder
  • 1 tablespoon of chili powder
  • 1/2 cup of apple cider vinegar
  • 3 tablespoons of sugar
  • 2 teaspoons of salt
  • 1/4 cup of tomato paste

    DIRECTIONS:

    Dice the onions, peppers,and tomatoes and place them in a pan to heat. Add the garlic powder, chili powder, vinegar, sugar and salt and cook slowly until the vegetables are soft but not too soft if you know what I mean. Add the tomato paste at the end. Take it off the heat and cool and get out the chips. For an even greater taste, try and add some fresh cilantro. Happy eating and don't forget like I mentioned, try and get your fresh fruits and vegetables at your local Farmer's Market.
