Double Apple Chicken
1/3 cup Apple butter
1/2 tsp Finely chopped lemon peel
3 tbs Lemon juice
2 tbs Melted butter
3/4 tsp Apple pie spice
1/8 tsp Cayenne pepper
4 Boneless chicken breast halves
2 Medium apples cored and cut into ½ inch rings
In a medium bowl, combine apple butter, lemon peel, and 1 tablespoon of the lemon juice; set aside.
In another small bowl, combine the remaining 2 tablespoons lemon juice, the melted butter, and ¼ teaspoon of the apple pie spice. Set aside.
In a small bowl, combine salt, remaining 1/2 teaspoon apple pie spice and the cayenne pepper;
Sprinkle evenly onto chicken breast halves.
Prepare grill for indirect grilling. Test for medium heat above the drip pan. Place chicken on the grill rack over the drip pan. Brush with apple butter mixture. Cover and grill for 5 minutes. Turn chicken; Brush again with apple butter mixture. Discard any remaining apple butter mixture.
Brush both sides of apple slices with some of the lemon butter mixture; place slices on the grill rack directly over the heat. Cover and grill for 10-13 minutes more or until chicken is no longer pink and apple slices are tender. Brush apple slices with remaining lemon butter mixture.
On each of the 4 dinner plates, arrange 2 apple slices; top each with a chicken breast half. Serve.
