Helping Moms Turn Into 'Sneaky' Chefs

HUNTINGTON, W.Va. (WSAZ) -- Vickie Sallie's a registered dietitian by trade. At home, however, she's known as "The Sneaky Chef."

To celebrate National Nutrition Month, St. Mary's Medical Center hosted an informational display titled "Nutrition from the Ground Up." It was a seminar Wednesday that focused on healthier eating and food demonstrations.

"Broccoli, peas and spinach make a great puree, "Sallie says. "You could add it to lasagna or meatloaf and, believe it or not, you really can't see it."

Sallie likes taking traditional recipes and throwing in healthier ingredients to boost the fiber and protein content.

The Tri-State Area is known for being high on the lists for obesity, heart disease and diabetes. This nutritional seminar, which focuses on healthy, fresher alternatives, hopes to change people's eating habits one meal at a time.

One example Sallie uses to demonstrate her "sneaky chef" techniques is a simple brownie recipe she found on the Internet.

It doesn't get any more simple than this:

BLACK BEAN BROWNIES

1 box brownie mix
1 14- to 15-ounce can black beans
whipped topping (optional)

1) Drain and rinse beans. Pour them back into the can. Add water to can until it's filled to the brim. Pour contents of can into a blender and puree. There should be no graininess, or too-visible brown specks.

2) In a medium bowl, combine bean mixture with brownie mix. Follow the rest of the cooking directions as you read them on the package.

Why ruin a brownie mix? How much MORE ADDED nutrition will they actually get by eating a brownie with a dash of beat up black beans in it? STUuuuuPID!

How is being a "sneaky Chef" going to get your children to like what is healthy for them? I want mine to learn to like what is healthy and I don't want to hide it from them. I want them to see me eat and love what is healthy and to offer it to them on a regular basis. Not hide it from them and act like its not in the foods.

I think I must have done it wrong, because it tasted like I dropped Mexican take out into my brownies. Oh well it was worth a shot.
